Ingredients
- 1 cup coconut flour
- 2 tbsp cacao powder
- 1/2 tsp baking soda
- 2 eggs
- 1/3 cup coconut oil melted
- 1/4 cup maple syrup
- 1 tsp peppermint extract
- 1/3 cup dark chocolate chips
- 3 tbsp crushed peppermint

Instructions
- Preheat oven to 350F
- In a bowl, mix together the flour, cacao powder and baking soda
- In another bowl, combine the eggs, coconut oil, maple syrup and peppermint extract
- Add the flour mixture to the wet and mix
- Let it sit for 5 min before folding in chocolate chips and crushed peppermint
- Scoop and roll onto parchment lined baking sheet
- Flatten slightly with palm and top with more crushed peppermint
- Bake for 12 minutes
- Let cool and enjoy!
