Ingredients
  • 1 1/2cup cassava flourcan sub organic all purpose
  • 1/2tsp baking soda
  • 1tsp cream of tartar
  • 1/2tbsp ground ginger
  • 1/2cup salted buttersoftened
  • 1 egg
  • 1tsp vanilla extract
  • 1/3cup coconut sugar
  • 3 tbps maple syrup
Instructions
  1. Preheat oven to 350F
  2. In a bowl, cream together the butter and coconut sugar
  3. Add in the egg, vanilla and maple syrup and mix
  4. In another bowl, mix together the flour, baking soda, cream of tartar, cinnamon and ground ginger
  5. Add to the wet mixture and stir until fully combined
  6. Refrigerate for 30 minutes
  7. Make cinnamon sugar topping: 1/4 cup org cane sugar + 1 tsp cinnamon and add to a ziplock
  8. Scoop and tightly roll dough into balls
  9. Shake balls in ziplock or roll in cinnamon sugar topping
  10. Add to parchment paper lined baking sheet and flatten with palm
  11. Sprinkle more cinnamon sugar on top
  12. Bake for 12 min
  13. Allow cookies to cool and enjoy!
