Healthy Blueberry Crumble Bars
Ingredients
  • Crust:
  • 1cup almond flour
  • 1/2cup coconut flour
  • 1/3cup coconut oilmelted
  • 1/4cup maple syrup
  • Blueberry chia jam:
  • 1pint blueberries
  • 1/3cup chia seeds
Instructions
  1. Mix all crust ingredients in a bowl and mash down 3/4 of it into a lined 8×8 dish.
  2. Warm the blueberries on low-med in a pan and when soft enough mash down. Add in the chia seeds and let it simmer to thicken.
  3. Let it cool for 15 min and pour evenly over crust layer. Crumble the remaining crust over the top
  4. Bake at 350F for 30 min
  5. Cut into squares & enjoy!
