Healthy Cassava Flour Blueberry Pancakes
Ingredients
  • 1 eggroom temp
  • 3tbsp coconut oilmelted
  • 1 1/3cup almond milk
  • 1tsp vanilla
  • 1 1/2cup cassava flour
  • 1tsp baking powder
  • 1tbsp coconut sugar
Instructions
  1. Mix egg, vanilla, coconut oil and milk in a large bowl
  2. Mix flour, baking powder and coconut sugar in a smaller bowl
  3. Add flour mixture to wet mixture and mix until fully combined
  4. Warm a large pan over low-medium heat
  5. Scoop batter, flatten slightly and add blueberries (optional)
  6. Flip after 3-4 min and let sit until cooked through
  7. Pour maple syrup and serve!

*can sub any oil for the coconut oil, any sugar for the coconut sugar, regular flour for cassava flour, milk of choice*
