Healthy Oat Flour Banana Apple Bread
Gluten free, dairy free, nut free healthy banana bread. Warm up a slice and enjoy with your morning cup of coffee/tea!

Ingredients
  • 2 1/2c GF oat flour*see notes below*
  • 3tbsp coconut sugar
  • 1/2tsp baking soda
  • 1tsp baking powder
  • 2tsp cinnamon
  • 1c mashed banana*about 3 ripe bananas*
  • 2 eggs
  • 1/4c coconut oilmelted and cooled
  • 1/4c Unsweetened almond milk
  • 1tsp vanilla
  • 1/4c maple syrup*can sub honey*
  • 1c diced apples
Instructions
  1. Preheat oven to 350F
  2. In a bowl, mix together the flour, coconut sugar, baking soda, baking powder and cinnamon
  3. In another bowl, whisk the eggs together with the mashed banana, coconut oil, almond milk, vanilla and maple syrup
  4. Add the flour mixture to the wet mixture and stir until fully combined
  5. Fold in diced apples (leave some out for topping)
  6. Pour the batter into a bread pan lined with parchment paper and top with more apples and optional pumpkin seeds
  7. Bake for 50-60 minutes or until toothpick comes out clean
  8. Let it cool before slicing

Recipe Notes

*To make your own oat flour: add GF oats to a blender and blend until flour like consistency 

Store bread in airtight container in fridge for up to 1 week
