Healthy Pumpkin Banana Bread

Ingredients
  • 2/3cup coconut flour
  • 3/4tsp baking soda
  • 1tsp pumpkin pie spice
  • 1cup bananamashed
  • 1/4cup pumpkin puree
  • 2tbsp unsweetened applesauce
  • 2 eggs
  • 1tbsp date syrup or maple syrup
Instructions
  1. Preheat oven to 350F
  2. In a bowl, mix the coconut flour, baking soda and pumpkin pie spice
  3. In another bowl, whisk the eggs. Add in the mashed banana, pumpkin and sweetener and mix well. Add in the applesauce and mix
  4. Add the flour mixture to the wet mixture and stir until fully combined
  5. Pour the batter into a bread pan lined with parchment paper
  6. Optional: top with chocolate chips
  7. Bake for 40-45 minutes or until toothpick comes out clean
  8. Let cool before removing from pan. Slice and enjoy! 🙂
