Ingredients
2/3
cup
coconut flour
3/4
tsp
baking soda
1
tsp
pumpkin pie spice
1
cup
banana
mashed
1/4
cup
pumpkin puree
2
tbsp
unsweetened applesauce
2
eggs
1
tbsp
date syrup or maple syrup
Instructions
Preheat oven to 350F
In a bowl, mix the coconut flour, baking soda and pumpkin pie spice
In another bowl, whisk the eggs. Add in the mashed banana, pumpkin and sweetener and mix well. Add in the applesauce and mix
Add the flour mixture to the wet mixture and stir until fully combined
Pour the batter into a bread pan lined with parchment paper
Optional: top with chocolate chips
Bake for 40-45 minutes or until toothpick comes out clean
Let cool before removing from pan. Slice and enjoy! 🙂
