1/3cupgheemelted/softened (can sub butter or coconut oil)
Juice from 1/2 a lemon
1/4cuporganic cane sugar
1egg
1cupcassava flour(can sub regular AP flour or gluten free flour)
1tbsppowdered sugar
Instructions
Preheat oven to 325F
Cream together the ghee and sugar. Add in the room temp egg and lemon juice and whisk together.
Add in the flour and powdered sugar and mix until fully combined.
Scoop, roll and flatten onto a lined baking sheet.
Bake for 18-20 min
While the cookies are baking, make the glaze: juice from the other half of your lemon (about 2 tbsp) + 1/4 cup powdered sugar. Can add more or less depending on how thin you want the glaze to be.
