Lemon Glazed Cookies
Ingredients
  • 1/3cup gheemelted/softened (can sub butter or coconut oil)
  • Juice from 1/2 a lemon
  • 1/4cup organic cane sugar
  • 1 egg
  • 1cup cassava flour(can sub regular AP flour or gluten free flour)
  • 1tbsp powdered sugar
Instructions
  1. Preheat oven to 325F
  2. Cream together the ghee and sugar. Add in the room temp egg and lemon juice and whisk together.
  3. Add in the flour and powdered sugar and mix until fully combined.
  4. Scoop, roll and flatten onto a lined baking sheet.
  5. Bake for 18-20 min
  6. While the cookies are baking, make the glaze: juice from the other half of your lemon (about 2 tbsp) + 1/4 cup powdered sugar. Can add more or less depending on how thin you want the glaze to be.
  7. Top the cookies with the glaze and enjoy!
