Ingredients
- 1 1/4 cup pumpkin puree
- 1/4 cup almond milk
- 2 eggs
- 1/4 cup maple syrup
- 1/3 cup applesauce
- 2 cup ap flour can sub cassava or almond
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup coconut sugar
- 2 tsp pumpkin pie spice

Instructions
- Preheat oven to 350F
- Mix all wet ingredients in a bowl and dry ingredients in another bowl.
- Combine dry to wet and stir well.
- Fold in 1 cup diced apples (about 1/2 an apple)
- Scoop batter evenly in an oiled/lined muffin pan
- Crumble topping over each muffin (oat streusel: 2 tbsp melted coconut oil + 2 tbsp coconut sugar + 2 tbsp oats + 1/4 cup flour + 1/2 tsp pumpkin pie spice)
- Bake for 20-25 min or until toothpick comes out clean
