Pumpkin Pie Bars
Ingredients
  • Crust:
  • 1cup almond flour
  • 3tbsp coconut flour
  • 1/4cup coconut sugar
  • 4tbsp coconut oilmelted
  • 1 egg
  • Filling:
  • 15oz can pumpkin puree
  • 2 eggs
  • 1/3cup maple syrup
  • 1tsp vanilla
  • 2tsp pumpkin pie spice
  • 1tbsp ground flaxseed
Instructions
  1. Preheat oven to 350F
  2. Mix all crust ingredients together in a bowl
  3. Press down into an 8×8 dish lined with parchment paper and bake for 10 min
  4. While the crust is cooling, make the filling by mixing the filling ingredients together in a bowl
  5. Pour over the cooled crust and bake for 1 hour or until the filling no longer jiggles
  6. Let cool, cut into squares, sprinkle with powdered sugar and enjoy! 🙂
