Ranch Pasta Salad

Ingredients
  • 2cups pasta cooked according to package*I used chickpea pasta for protein and chose a shape with fun grooves so the flavors get into the noodle
  • 1tbsp ranch seasoning mix
  • 3tbsp dairy free yogurt of choice
  • Salt and pepper to taste
  • Cherry tomatoes
  • Orange bell pepper
  • Cucumber
  • Juice from half a lemon
  • 1-2tbsp extra virgin olive oil
Instructions
  1. Add the ranch seasoning to the yogurt and mix well
  2. Add to cooked pasta and stir
  3. Add all cut up vegetables
  4. Squeeze lemon on top and add olive oil
  5. Mix well
  6. Let it sit in fridge for one hour before serving
  7. Enjoy! 🙂
