Whole Wheat Banana Chocolate Chip Muffins

Ingredients
  • 2cups whole wheat flour
  • 1tsp baking soda
  • 1tsp cinnamon
  • 2tbsp ground flaxseedoptional
  • 1cup mashed banana
  • 2 eggs
  • 1/4cup Unsweetened almond milk
  • 1/4cup maple syrup
  • 1tsp vanilla
  • 3/4cup dark chocolate chips
Instructions
  1. Preheat oven to 350F
  2. In a bowl, mix the flour, baking soda, cinnamon and flaxseed
  3. In another bowl, mix the bananas, eggs, milk, maple syrup and vanilla
  4. Add flour mixture to wet mixture and stir until fully combined
  5. Fold in chocolate chips
  6. Scoop into oiled/lined muffin pan and bake for 22 minutes (or until toothpick comes out clean)

*to make a loaf/bread: pour batter into parchment lined bread pan and bake at 350F for 50-55 minutes or until toothpick comes out clean*

Store in airtight container on at room temp for 4 days/refrigerator for up to 1 week
