Ingredients
1 1/3 c almond flour
1/3 c coconut flour
3/4 c coconut sugar
1 1/2 tsp baking powder
2 eggs
1/2 c almond milk
2 tsp vanilla
1/3 c coconut oil, melted
Instructions
Preheat oven to 350F
In a bowl, mix the almond flour, coconut flour and baking powder together
In another bowl, mix the almond milk, eggs, vanilla and coconut oil. Add in the coconut sugar 1/4 c at a time mixing well each time
Add the flour mixture to the wet and mix
Pour batter into an oiled or parchment lined 9 inch cake pan
Bake for 30 min or until toothpick comes out clean
Let cake cool completely before removing from pan (I let it sit in the fridge overnight)
Frost with anything you’d like– I used vanilla greek yogurt
Top with fruit– I used strawberries but any fruit will pair well
