preheat oven to 350F
cream together 1/3 cup softened butter + 1/2 cup brown sugar + 1 tsp vanilla + 1/3 cup Trader Joe’s speculoos cookie butter (or biscoff)
whisk in 1 egg
add in 1 1/4 cup all purpose flour + 1/2 tsp baking soda
refrigerate dough for 30 min
scoop on a lined baking sheet (15 total)
add 1 tsp cookie butter to center and roll dough around it to make a ball
bake for 10-12 min or until edges are golden
