1 chopped cucumber
2 chopped peppers
1 cup shredded carrots
1 1/2 cups rice noodles (cooked according to package directions)
peanut sauce dressing:
1/2 cup pb + 2 tsp ACV + 1 tbsp maple syrup + 2 tbsp coconut aminos (or soy sauce) + 1/4 cup water
