Ingredients
1/2 cup softened coconut oil (or butter)
1 cup oat flour (or all purpose)
1 cup oats
1/4 cup brown sugar
2 tbsp oat milk (or milk of choice)
2 cups cut up strawberries
2 tbsp maple syrup
2 tbsp arrowroot flour (or cornstarch)
Instructions
Preheat oven to 350F
Mix oil, flour, oats, brown sugar and milk together in a bowl
Press into a lined muffin pan and leave a little extra for the topping
Stir the strawberries, maple syrup and arrowroot flour together
Add evenly on top of oat mixture and crumble remaining oats on top
Bake for 25-30 min or until topping is golden
Let cool and enjoy!
