over low-medium heat warm about 1/2 cup strawberries, mash down and measure out 1/3 cup + 2 tbsp ‘juice’
cream together 1/2 cup softened butter + 3/4 cup granulated sugar + 2 tsp vanilla
mix in 1/4 cup plain greek yogurt + 1/4 cup milk of choice
whisk in 3 egg whites and the cooled strawberry juice
add in 1 2/3 cup all purpose flour + 1 tsp baking powder and mix until combined
scoop evenly in a lined & oiled muffin pan (12)
bake at 350F for 23-25 min or until toothpick comes out clean
frosting: whip together 1/2 block softened cream cheese + 2 cups powdered sugar + 4 tbsp melted butter + 1/2 cup crushed freeze dried strawberries
