Ingredients
1 1/4 cup almond flour
3 tbsp coconut sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1/4 c coconut oil, melted
1/2 tsp vanilla
1/4 c white chocolate chips
Chopped strawberries
Instructions
Combine almond flour, coconut sugar, baking powder and salt in a bowl.
Combine egg, coconut oil, vanilla in another bowl.
Add flour mixture to wet mixture and mix well. Fold in strawberries and white chocolate chips.
Scoop onto pan lined with parchment paper, roll and flatten.
Bake at 350F for 12-14 min. Broil on low for 1 min, watching carefully so the cookies don’t burn.
Makes 12 cookies
