cream together 1/2 cup coconut oil (or butter/ghee) + 2/3 cup organic cane sugar + 1/2 cup plain greek yogurt + 1 tsp vanilla + 1 egg
add in 1 1/3 cup all purpose flour + 1 tsp baking powder
press down into a lined 9×9 pan and bake at 350F for 30 min or until golden
for the icing I warmed up strawberries and used 1 tbsp of the ‘juice’ and mixed it with 1 1/2 cup powdered sugar
