Ingredients
- 6 eggs
- 1 cup peppers cut up
- 1/2 cup spinach cut up
- Avocado oil spray
- Salt and pepper to taste
- Shredded cheese of choice

Instructions
- Preheat oven to 350F
- In a preheated skillet, spray avocado oil. Sautee spinach and peppers until spinach is wilted.
- Let cool for 5 minutes
- Whisk the eggs and salt & pepper in a measuring cup
- Add the spinach mixture to the egg mixture and stir
- Pour the mixture into an oiled muffin pan
- Bake for 20 min

Store in airtight container in fridge for an easy breakfast!
Substitute the peppers & spinach for: bacon, other veggies of choice, tomatoes etc.
