Ingredients
- 1 cup + 2 tbsp cassava flour can sub all purpose flour
- 1/3 cup GF oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter softened
- 1/3 cup organic cane sugar
- 1/4 cup coconut sugar can sub brown sugar
- 1 egg
- 1/3 cup butterscotch chips
- 1/3 cup dark chocolate chips

Instructions
- Preheat oven to 350F
- In a bowl, cream the butter and both sugars
- Add the egg and whisk
- In another bowl, mix the flour, oats, baking soda and salt
- Add the flour mixture to the wet mixture and stir
- Fold the chips into the batter
- Scoop onto lined baking sheet and flatten slightly
- Bake for 12 minutes or until edges are slightly browned
- *optional to broil on low for a minute*
