Ingredients
- 1 1/2 cup whole wheat flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/3 cup coconut sugar
- 1/2 cup unsweetened applesauce
- 2 tbsp maple syrup
- 1 egg + egg white
- 1/3 cup oat milk or any non dairy milk
- 1 pint organic blueberries *

Instructions
- Preheat oven to 375F
- In a bowl, combine the flour, baking soda and salt
- In a large bowl, mix together the coconut sugar, applesauce, maple syrup, eggs and milk
- Add the flour mixture to the wet and mix until fully combined
- Fold in blueberries
- Scoop the batter evenly among the lined muffin pan**
- Bake for 22 minutes
- Let cool and enjoy! 🙂
Recipe Notes
*Add 1/2 tbsp flour to the blueberries prior to adding to the batter so they don't sink while baking
**Lightly spray muffin liners with coconut oil to prevent batter from sticking too much to paper
Store in airtight container room temp for up to 4 days, in refrigerator for up to a week
