Cinnamon Toast Crunch Banana Bread

Ingredients
  • 1 cup mashed ripe bananas about 3
  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1/2 cup oil of choice (coconut, applesauce, avocado, butter/ghee), melted/softened
  • 2/3 cup coconut sugar (can sub brown sugar or reg sugar)
  • 2 cups gluten free all purpose flour/reg AP flour
  • 1 tsp baking soda

  • 2/3 cup coconut sugar (can sub brown sugar or reg sugar)
  • 2 cups gluten free all purpose flour/reg AP flour
  • 1 tsp baking soda
Instructions
  1. Preheat oven to 350F
  2. Cream oil + coconut sugar in a bowl.
  3. Add eggs, vanilla and milk and mix well.
  4. Mash in bananas
  5. In another bowl, mix together flour and baking soda and add to wet ingredients
  6. Stir until fully combined
  7. Cinnamon crumble: 2 tbsp melted coconut oil + 3 tbsp flour + 6 tbsp org cane sugar + 1 tsp cinnamon
  8. Pour into oiled/lined bread pan, crumble cinnamon mixture evenly on top and bake for 50-55 min or until toothpick comes out clean
