Lemon Glazed Cookies

Lemon Glazed Cookies

Ingredients
  • 1/3 cup ghee melted/softened (can sub butter or coconut oil)
  • Juice from 1/2 a lemon
  • 1/4 cup organic cane sugar
  • 1 egg
  • 1 cup cassava flour (can sub regular AP flour or gluten free flour)
  • 1 tbsp powdered sugar

  • Juice from 1/2 a lemon
  • 1/4 cup organic cane sugar
  • 1 egg
  • 1 cup cassava flour (can sub regular AP flour or gluten free flour)
  • 1 tbsp powdered sugar
Instructions
  1. Preheat oven to 325F
  2. Cream together the ghee and sugar. Add in the room temp egg and lemon juice and whisk together.
  3. Add in the flour and powdered sugar and mix until fully combined.
  4. Scoop, roll and flatten onto a lined baking sheet.
  5. Bake for 18-20 min
  6. While the cookies are baking, make the glaze: juice from the other half of your lemon (about 2 tbsp) + 1/4 cup powdered sugar. Can add more or less depending on how thin you want the glaze to be.
  7. Top the cookies with the glaze and enjoy!
