Ingredients
  • 6 eggs
  • 1 cup peppers cut up
  • 1/2 cup spinach cut up
  • Avocado oil spray
  • Salt and pepper to taste
  • Shredded cheese of choice

  • 6 eggs
  • 1 cup peppers cut up
  • 1/2 cup spinach cut up
  • Avocado oil spray
  • Salt and pepper to taste
  • Shredded cheese of choice
Instructions
  1. Preheat oven to 350F
  2. In a preheated skillet, spray avocado oil. Sautee spinach and peppers until spinach is wilted.
  3. Let cool for 5 minutes
  4. Whisk the eggs and salt & pepper in a measuring cup
  5. Add the spinach mixture to the egg mixture and stir
  6. Pour the mixture into an oiled muffin pan
  7. Bake for 20 min
Recipe Notes

Store in airtight container in fridge for an easy breakfast!

Substitute the peppers & spinach for: bacon, other veggies of choice, tomatoes etc.
