Ingredients
- 1 egg room temp
- 3 tbsp coconut oil melted
- 1 1/3 cup almond milk
- 1 tsp vanilla
- 1 1/2 cup cassava flour
- 1 tsp baking powder
- 1 tbsp coconut sugar

Instructions
- Mix egg, vanilla, coconut oil and milk in a large bowl
- Mix flour, baking powder and coconut sugar in a smaller bowl
- Add flour mixture to wet mixture and mix until fully combined
- Warm a large pan over low-medium heat
- Scoop batter, flatten slightly and add blueberries (optional)
- Flip after 3-4 min and let sit until cooked through
- Pour maple syrup and serve!

*can sub any oil for the coconut oil, any sugar for the coconut sugar, regular flour for cassava flour, milk of choice*
