Ingredients
- 2 1/2 c GF oat flour *see notes below*
- 3 tbsp coconut sugar
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 c mashed banana *about 3 ripe bananas*
- 2 eggs
- 1/4 c coconut oil melted and cooled
- 1/4 c Unsweetened almond milk
- 1 tsp vanilla
- 1/4 c maple syrup *can sub honey*
- 1 c diced apples

Instructions
- Preheat oven to 350F
- In a bowl, mix together the flour, coconut sugar, baking soda, baking powder and cinnamon
- In another bowl, whisk the eggs together with the mashed banana, coconut oil, almond milk, vanilla and maple syrup
- Add the flour mixture to the wet mixture and stir until fully combined
- Fold in diced apples (leave some out for topping)
- Pour the batter into a bread pan lined with parchment paper and top with more apples and optional pumpkin seeds
- Bake for 50-60 minutes or until toothpick comes out clean
- Let it cool before slicing

Recipe Notes
*To make your own oat flour: add GF oats to a blender and blend until flour like consistency
Store bread in airtight container in fridge for up to 1 week
