Ingredients
- 1/3 cup ghee melted/softened (can sub butter or coconut oil)
- Juice from 1/2 a lemon
- 1/4 cup organic cane sugar
- 1 egg
- 1 cup cassava flour (can sub regular AP flour or gluten free flour)
- 1 tbsp powdered sugar

Instructions
- Preheat oven to 325F
- Cream together the ghee and sugar. Add in the room temp egg and lemon juice and whisk together.
- Add in the flour and powdered sugar and mix until fully combined.
- Scoop, roll and flatten onto a lined baking sheet.
- Bake for 18-20 min
- While the cookies are baking, make the glaze: juice from the other half of your lemon (about 2 tbsp) + 1/4 cup powdered sugar. Can add more or less depending on how thin you want the glaze to be.
- Top the cookies with the glaze and enjoy!
