Ingredients
- Crust:
- 1 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1 egg
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce

Instructions
- Preheat oven to 350F
- Mix together the flours, baking soda and cinnamon
- In another bowl, mix the egg, maple syrup and applesauce
- Add the flour mixture to the wet mixture and stir until fully combined
- Scoop into oiled or lined muffin pan and make a small indent into the center of the batter
- Bake for 14-16 minutes (until crust is golden)
- While the crust is cooling, cut up a large apple (or a couple smaller ones) into small pieces
- Warm in coconut oil over low heat
- After 2 minutes, add 1 tbsp arrowroot powder, juice from 1/2 a lemon and sprinkle cinnamon over apples
- Let them sit over low heat until soft
- Add on top of crust and enjoy! 🙂
