Ingredients
- 2 1/2 cups mixed nuts can use any nuts
- 2 egg whites
- 1 tbsp coconut oil
- 1/2 tbsp pumpkin pie spice can substitute cinnamon
- 1/4 cup coconut sugar can substitute brown sugar
- 1/4 cup organic cane sugar
- 1/4 tsp salt

Instructions
- Preheat oven to 325F
- In a bowl, whisk the egg whites. Add in the coconut oil and whisk again
- Pour this mixture over the nuts in a larger bowl and stir until all the nuts are coated
- In another bowl, combine the sugar + pumpkin pie spice + salt
- Sprinkle the sugar mixture over the nuts in small amounts, mixing each time
- Spread the nuts on a baking sheet lined with parchment paper in an even layer
- Bake for 20 minutes, stirring halfway through
- Let cool completely before breaking apart and eating!
