Ingredients
- 2 cups pasta cooked according to package *I used chickpea pasta for protein and chose a shape with fun grooves so the flavors get into the noodle
- 1 tbsp ranch seasoning mix
- 3 tbsp dairy free yogurt of choice
- Salt and pepper to taste
- Cherry tomatoes
- Orange bell pepper
- Cucumber
- Juice from half a lemon
- 1-2 tbsp extra virgin olive oil

Instructions
- Add the ranch seasoning to the yogurt and mix well
- Add to cooked pasta and stir
- Add all cut up vegetables
- Squeeze lemon on top and add olive oil
- Mix well
- Let it sit in fridge for one hour before serving
